Back in early March, I found myself talking on the phone with Katherine Benvenuti, a recent Portland transplant with an impressive resume including some of California’s top restaurants and bakeries. The interview was supposed to be for a story about the new bakery Benvenuti was opening next to Bar King, the then-upcoming restaurant at the former home of Trifecta. But a delay pushed the opening back into late March, and by then, coronavirus cases were surging and Gov. Kate Brown had issued a ban on in-person dining across the state. I put the interview to rest in the small graveyard of stories I was working on just before the pandemic upended everything.
